Pineapple Mimosa

A refreshing and bubbly pineapple mimosa combines sweet pineapple juice with sparkling champagne, perfect for brunches or celebrations with a tropical twist.

Ingredients

  • 5 cups pineapple juice, chilled
  • pineapple juice cubes or ice cubes
  • 1 (750 ml) bottle champagne or sparkling water, chilled

Instructions

  1. Pour pineapple juice into ice cube trays and freeze to make pineapple cubes.
  2. Measure 1 cup of chilled pineapple juice and 1 cup of pineapple juice cubes or ice cubes into a blender.
  3. Whirl until foamy.
  4. Add 1/2 cup of champagne and whirl for 2 seconds.
  5. Let stand for 30 seconds to allow foam to settle.
  6. Pour into 2 or 3 glasses.
  7. To make a larger quantity, fill the blender to capacity using the same proportions.
