Pineapple Mustard Chicken

Ingredients

  • 1 (20 oz.) can pineapple chunks
  • 4 chicken breast halves
  • 2 cloves garlic, pressed
  • 1 tsp. thyme
  • 1 Tbsp. cornstarch
  • 1/4 c. honey
  • 1/4 c. Dijon mustard

Instructions

  1. Drain pineapple; reserve juice.
  2. Sprinkle chicken with salt and pepper.
  3. Brown in hot oil.
  4. Add garlic and thyme.
  5. Turn chicken over; brown other side.
  6. Combine 2 tablespoons reserved juice with cornstarch; set aside.
  7. Combine honey and mustard; add to chicken in skillet with remaining pineapple juice.
  8. Cover; simmer for 25 minutes.
  9. Stir cornstarch mixture into pan juices. Add pineapple; stir until sauce boils and thickens.
