Pineapple Pancake Pie

Instructions
- 1. Mix ingredients until batter is smooth and free from lumps
- 2. Bake in a well buttered frying pan. Cakes should be about 8 inches in diameter. As soon as brown on one side turn.
- 3. When cooked on both sides remove to a hot serving dish and sprinkle with sweetened pineapple.
- 4. Bake the remainder of batter in the same way, piling in layers with the pineapple between the cakes.
- 5. Cut in triangular pieces like pie and serve very hot.
