Pineapple Square Cake

Ingredients

  • 2 c. sugar
  • 1 c. shortening
  • 4 eggs
  • 2 c. cake flour
  • 1 c. self-rising flour
  • 1/2 c. pineapple juice
  • 1/2 c. heavy cream
  • a few drops yellow food coloring
  • 1/2 tsp. lemon flavoring

Instructions

  1. Cream sugar and shortening.
  2. Add eggs and fold in at high speed.
  3. Sift flour.
  4. Add 1 cup at a time and beat 1 minute.
  5. Add cream and juice, then flavorings.
  6. Beat well.
  7. Bake in a square pan for 40 to 60 minutes at 300°.
  8. Cool.
