Pineapple Trifle

Ingredients

  • 16 oz. can pineapple tidbits
  • 2 packs vanilla pudding mix (3 to 4 oz each)
  • 3 c. milk
  • 8 oz. sour cream
  • 1 angel food cake mix or yellow cake mix
  • 8 oz. Cool Whip

Instructions

  1. Bake the cake according to the box directions and let it cool.
  2. Cut the cooled cake into small squares and set aside.
  3. Drain the pineapple tidbits and reserve the juice.
  4. In a large bowl, combine vanilla pudding mix, 1/2 cup of reserved pineapple juice, and milk.
  5. Beat at low speed with a mixer for 2 minutes or until thickened.
  6. Fold in sour cream and drained pineapple tidbits.
  7. Place one-third of the cake cubes in the bottom of a trifle bowl.
  8. Drizzle with one to two tablespoons of the remaining pineapple juice.
  9. Spoon in one-third of the pudding mixture over the cake layer.
  10. Repeat the layers with remaining cake, juice, and pudding.
  11. Chill the assembled trifle for at least 3 hours.
  12. Just before serving, spread the top with Cool Whip.
  13. Garnish if desired and serve.
