- Take a soda box, cut 2 1/2 inches from the bottom, and fill it with sugar.
- Sift the sugar 7 times.
- Fill a measuring box with flour and cream of tartar, then sift this mixture 7 times.
- Separate 12 hen eggs, keeping the egg whites and yolks separate.
- Add 1 teaspoon of vanilla to the egg whites.
- Gradually add the sugar to the egg whites, beating until stiff peaks form.
- Gently fold in the sifted flour and cream of tartar mixture into the beaten egg whites.
- Pour the batter into an ungreased angel cake pan or tube pan.
- Bake at a moderate temperature until the cake is golden and a toothpick inserted comes out clean.
- Allow the cake to cool before removing from the pan.
