Ingredients

  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon cream of tartar
  • 12 hen eggs
  • 1 teaspoon vanilla

Instructions

  1. Take a soda box, cut 2 1/2 inches from the bottom, and fill it with sugar.
  2. Sift the sugar 7 times.
  3. Fill a measuring box with flour and cream of tartar, then sift this mixture 7 times.
  4. Separate 12 hen eggs, keeping the egg whites and yolks separate.
  5. Add 1 teaspoon of vanilla to the egg whites.
  6. Gradually add the sugar to the egg whites, beating until stiff peaks form.
  7. Gently fold in the sifted flour and cream of tartar mixture into the beaten egg whites.
  8. Pour the batter into an ungreased angel cake pan or tube pan.
  9. Bake at a moderate temperature until the cake is golden and a toothpick inserted comes out clean.
  10. Allow the cake to cool before removing from the pan.
