Potato Bake Casserole

- Wash and peel potatoes and cut in thin slices.
- Place sliced potatoes in casserole dish which has been coated with spray shortening.
- Sprinkle with salt, pepper, garlic and parsley.
- Pour melted butter over this and place in a preheated 350° oven for about 30 to 45 minutes.
- Thinly slice onion.
- Mix onion and mushrooms together and spread over potato mixture.
- Reduce oven temperature to 300°; cover casserole dish and bake an additional 30 minutes or until potatoes are soft and bubbly.
- Sprinkle with parsley flakes.
- Serve hot with or without sour cream.
- A great side dish for almost any type of meat.
