Ingredients

  • 4 to 5 lb. peeled raw potatoes
  • 2 tsp. salt
  • 1 cup oatmeal
  • about 2 cups flour
  • cut up bacon

Instructions

  1. Boil lightly salted water in a large heavy kettle.
  2. Grate or grind the peeled raw potatoes and strain the grated potatoes.
  3. Discard the liquid from the strained potatoes.
  4. Put the grated potatoes into a large bowl.
  5. Add oatmeal, salt, and enough flour to form balls in the palm of your hand.
  6. Dip a large spoon in cold water to help shape the balls.
  7. Place cut-up bacon in the middle of each ball and roll to cover the bacon.
  8. Drop the balls into boiling, salted water.
  9. Keep the water boiling constantly.
  10. Boil for about 1 hour, shaking and moving the balls around carefully with a wooden spoon to prevent sticking.
  11. Serve the potato balls with butter.
  12. They may be served with or without broth.
  13. They can also be served cold, sliced, and fried in butter on both sides.
