Potato Croquette

Instructions
- Boil potatoes until soft.
- Brown meat with onions, garlic and celery.
- Mash potatoes and add to browned ingredients.
- Add salt and pepper to taste.
- Mix lightly beaten egg yolks to the potato mixture.
- Roll into balls 1-inch or more in diameter.
- Dip balls in beaten egg whites and then roll in bread crumbs.
- Fry the balls in hot oil until nice and brown.
- Drain on paper towels.
- Serve with sour cream onion soup dip or Hidden Valley dip.
