Ingredients

  • 1 1/2 cups warm water or potato water
  • 2/3 cup sugar
  • 1 1/2 teaspoons salt
  • 2 packages dry yeast
  • 2/3 cup soft shortening
  • 1 cup mashed potatoes (warm)
  • 7 to 7 1/2 cups plain flour

Instructions

  1. Mix together warm water or potato water, sugar, salt, and dry yeast until dissolved.
  2. Add soft shortening and warm mashed potatoes to the mixture.
  3. Mix with a spoon and then knead with hands until smooth.
  4. Gradually add plain flour and knead to form a soft dough.
  5. Shape the dough into rolls and place on a baking sheet.
  6. Bake at 400°F (200°C) for about 12 minutes or until golden brown.
  7. Store in an airtight container in the refrigerator for 3 to 4 days if needed.
