Ingredients

  • 3 medium potatoes
  • 2 packages yeast
  • 1/2 cup sugar
  • 5 to 7 cups plain flour
  • 2 cups potato water
  • 1 tablespoon salt
  • 3/4 cup Crisco

Instructions

  1. Cook potatoes in enough water to have 2 cups of potato water. Drain and set the potato water aside to cool.
  2. Mix yeast, salt, and sugar in a large mixing bowl.
  3. Cream the hot cooked potatoes with Crisco until smooth.
  4. Add the creamed potatoes, cooled potato water, and the yeast mixture to the bowl.
  5. Let the mixture sit for 2 hours to ferment.
  6. Work in the flour gradually until a soft dough forms.
  7. Knead the dough until elastic, then let it rise until doubled.
  8. Shape into rolls and bake in a preheated oven until golden brown.
