Ingredients

  • 6 Tbsp oleo, divided
  • 6 Tbsp finely chopped onion
  • 1/2 tsp salt
  • 1/4 tsp dried basil leaves
  • 1/4 tsp dried thyme leaves or dried chives
  • 2 lb white potatoes, peeled and very thinly sliced
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Combine dried basil, dried thyme or chives, salt, and black pepper to create the seasoning mixture.
  3. Place 2 tablespoons of oleo in a nonstick skillet and melt over medium heat.
  4. Arrange one-third of the sliced potatoes in a circular pattern in a baking dish, about one-third of the seasoning, one-third of the chopped onion, and 2 tablespoons of melted oleo over the layer.
  5. Repeat the layering process two more times with the remaining potatoes, seasoning, onions, and oleo.
  6. Cover the dish tightly with foil and press down gently to compact the layers.
  7. Bake uncovered for 20 minutes.
  8. Remove from oven and bake for another 20 minutes.
  9. Uncover and bake for an additional 20 minutes or until the potatoes are tender and the top is golden brown.
  10. Remove from oven and press down with a spatula to flatten.
  11. Let stand for 10 minutes, then transfer to a serving platter.
  12. Serve hot.
