Prawn Salad
Ingredients
- 24 None cooked extra large shrimp, peeled and deveined, with tails on ⓘ
- 11 oz papaya, seeded, peeled and thinly sliced ⓘ
- 2 None avocados, seeded, peeled and cubed ⓘ
- 2 oz watercress, washed ⓘ
- 7 oz snow pea sprouts
- 1/2 None lime, juiced
- None None FOR THE DRESSING ⓘ
- 1/4 cup mayonnaise ⓘ
- 1/4 cup sour cream ⓘ
- 1/2 None lime, peel finely grated and lime juiced ⓘ
Instructions
- Combine shrimp, papaya, avocado, watercress and snow pea shoots in a large bowl. Drizzle with lime juice. Season to taste.
- For the dressing, whisk mayonnaise, sour cream, lime peel and juice, 1/2 the chili pepper and Tabasco sauce in a small bowl. Season to taste.
- Arrange salad in serving dishes. Drizzle with dressing and sprinkle with remaining chili pepper.
