Ingredients

  • 24 None cooked extra large shrimp, peeled and deveined, with tails on
  • 11 oz papaya, seeded, peeled and thinly sliced
  • 2 None avocados, seeded, peeled and cubed
  • 2 oz watercress, washed
  • 7 oz snow pea sprouts
  • 1/2 None lime, juiced
  • None None FOR THE DRESSING
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 None lime, peel finely grated and lime juiced

Instructions

  1. Combine shrimp, papaya, avocado, watercress and snow pea shoots in a large bowl. Drizzle with lime juice. Season to taste.
  2. For the dressing, whisk mayonnaise, sour cream, lime peel and juice, 1/2 the chili pepper and Tabasco sauce in a small bowl. Season to taste.
  3. Arrange salad in serving dishes. Drizzle with dressing and sprinkle with remaining chili pepper.
