Ingredients

  • 1 3/4 cup juice
  • 1 3/4 cup water
  • 1 tablespoon lemon juice
  • 1 box commercial gelatin
  • 5 cups sugar

Instructions

  1. Bring prickly pear juice, water, lemon juice, and commercial gelatin to a rapid boil.
  2. Add sugar all at once and return to a rapid boil again.
  3. Boil the mixture hard for 10 minutes, stirring once or twice during boiling.
  4. Skim foam off the top of the boiling jelly.
  5. Pour into hot sterilized jars and seal with paraffin.
