Instructions

  1. Allow the prime rib to come to room temperature.
  2. Preheat the oven to 500°F (260°C).
  3. Roll the prime rib in rock salt to coat evenly.
  4. Place the salted prime rib on a baking rack set in a pan.
  5. Put the prime rib in the preheated oven and roast for 15 minutes.
  6. Reduce the oven temperature to 350°F (175°C) and bake for 15 minutes per pound of meat.
  7. When done, turn off the oven and let the roast set for a few minutes before serving.
  8. Remove the string, and the rib will fall off.
  9. Slice to your desired thickness; note that outside end pieces will be more cooked.
