Instructions
- Allow the prime rib to come to room temperature.
- Preheat the oven to 500°F (260°C).
- Roll the prime rib in rock salt to coat evenly.
- Place the salted prime rib on a baking rack set in a pan.
- Put the prime rib in the preheated oven and roast for 15 minutes.
- Reduce the oven temperature to 350°F (175°C) and bake for 15 minutes per pound of meat.
- When done, turn off the oven and let the roast set for a few minutes before serving.
- Remove the string, and the rib will fall off.
- Slice to your desired thickness; note that outside end pieces will be more cooked.
