Ingredients

  • 3 cups white sugar
  • 1 cup hot water
  • pinch of soda
  • 1 cup milk
  • 1 stick creamery butter

Instructions

  1. Mix sugar, hot water, and soda in a large, heavy kettle.
  2. Start boiling on high, then reduce to medium heat and let boil until it starts turning a cream color (248°F).
  3. Do not stir the mixture during boiling.
  4. Pour the hot syrup onto a buttered marble slab.
  5. Butter your hands and wait until the mixture cools enough to handle.
  6. Start pulling the candy until it holds its shape and becomes almost white in color.
  7. Cut the pulled candy into pillows with scissors and cool on the marble slab.
  8. Enjoy immediately or store in an airtight container.
