- In a large bowl, with an electric mixer, beat together cream cheese and peppermint extract.
- Gradually add powdered sugar and beat until smooth, kneading the last of the powdered sugar in with hands.
- Form the mixture into cherry-sized balls and roll in rainbow sugar, if desired.
- Place the mints on waxed paper and flatten them with a fork.
- Let stand overnight before serving.
