Ingredients

  • 1 (3 oz.) pkg. cream cheese, softened
  • 1/2 tsp. peppermint extract
  • 3 c. powdered sugar, sifted
  • rainbow sugar (optional)

Instructions

  1. In a large bowl, with an electric mixer, beat together cream cheese and peppermint extract.
  2. Gradually add powdered sugar and beat until smooth, kneading the last of the powdered sugar in with hands.
  3. Form the mixture into cherry-sized balls and roll in rainbow sugar, if desired.
  4. Place the mints on waxed paper and flatten them with a fork.
  5. Let stand overnight before serving.
