Ingredients

  • 1 firm, medium size dry pumpkin
  • 1 dozen lemons
  • 1 cup sugar for every 2 cups of pumpkin chips

Instructions

  1. Peel the pumpkin and cut into thin, 1/2-inch square pieces.
  2. Add sugar and lemon juice to the pumpkin pieces, and save the lemon skins.
  3. Let the mixture stand overnight.
  4. Boil the pumpkin chips until they look clear and transparent.
  5. Take out the chips and boil the syrup until it thickens slightly.
  6. Cut up the lemon skins and boil them separately until soft.
  7. Add the pumpkin chips and lemon skins to the thickened syrup and bring to a boil.
  8. Place the mixture in jars and seal.
