Ingredients

  • 1 qt. vanilla ice cream, softened
  • 2 1/2 cups pumpkin pie filling
  • 1 (25 oz.) bottle apple cider, chilled
  • 1 liter seltzer water, chilled

Instructions

  1. Four to five hours before serving, combine the vanilla ice cream and 1 1/2 cups of pumpkin pie filling in a large bowl.
  2. Stir until well blended.
  3. Transfer the mixture to a freezer-safe container and freeze for 2 hours.
  4. Beat the frozen mixture with a mixer until smooth.
  5. Tightly cover and freeze for an additional 2 hours or until firm.
