Ingredients

  • 1 lb. rotini
  • 1 large can tuna
  • 1 (16 oz.) can plum tomatoes
  • 3 Tbsp. fresh parsley, chopped
  • 3 Tbsp. fresh cilantro, chopped
  • 1 medium Spanish onion, coarsely chopped
  • 6 anchovies, finely chopped
  • 3 or 4 Tbsp. olive oil
  • 1/4 tsp. crushed red pepper
  • 3 or 4 Tbsp. capers

Instructions

  1. Chop pasta al dente.
  2. Chop tomatoes (coarsely), retaining fluid.
  3. Drain tuna. Mix all ingredients, except olive oil.
  4. When pasta is done, drain and rinse in hot water.
