Ingredients

  • 4 c. buttercup squash without skin, seeds
  • 4 to 5 c. water
  • 1/4 tsp. salt
  • sliced scallions (for garnish)

Instructions

  1. Cover the buttercup squash and water in a saucepan.
  2. Cook for 15 to 20 minutes until the squash is tender.
  3. Puree the cooked squash until smooth.
  4. Garnish with sliced scallions before serving.
