Quick Blueberry Slump

Ingredients

  • 1/2 c. all-purpose flour
  • 1/4 tsp. salt
  • 1 1/2 c. sugar
  • 5 c. fresh or frozen blueberries, thawed
  • 2 Tbsp. lemon juice
  • 2 Tbsp. butter
  • 1 (9-inch) refrigerated pie crust

Instructions

  1. Combine flour, salt and sugar in a medium bowl.
  2. Add blueberries; toss gently.
  3. Spoon into a lightly greased 8-inch square baking dish.
  4. Sprinkle lemon juice over mixture and dot with butter.
  5. Cut pastry to fit top.
  6. Place over filling.
  7. Make several cuts in pastry to allow steam to escape.
  8. Bake at 450° for 18 to 20 minutes or until crust is golden.
