Quick Buttermilk Bread

Ingredients

  • 2 (1/4 ounce) packages active dry yeast
  • 3/4 cup warm water
  • 1 1/4 cups buttermilk
  • 4 1/2 - 5 cups all-purpose flour
  • 1/4 cup shortening
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 2 teaspoons salt

Instructions

  1. Dissolve yeast in warm water.
  2. Add buttermilk, 2 1/2 cups flour, shortening, sugar, baking powder, salt, and mix well.
  3. Add remaining flour and mix well. Dough should be soft and slightly sticky.
  4. Turn dough out onto well floured surface and knead 5 minute.
  5. Roll dough into a 9x18 inch rectangle, and starting at the short side, roll up into a roll.
  6. Press down ends of roll to seal, and tuck ends under roll.
  7. Place roll in greased loaf pan, seam side down and cover with damp cloth. Let rise 1 hr, or until doubled.
  8. Heat oven to 425F and bake approx 35 minute Loaves should be golden brown and sound hollow when tapped.
