Ingredients

  • 2 to 3 cups gently crushed tortilla chips
  • 2 cups enchilada sauce, a mix of salsa and tomato sauce, or plain red or green salsa
  • 1 cup shredded cheddar cheese
  • Sour cream (optional)
  • Avocado (optional)

Instructions

  1. Put the chips into a frying pan over medium heat.
  2. Pour the sauce over and cover the pan.
  3. Simmer until the chips have absorbed some of the sauce and softened, about 5 minutes.
  4. Sprinkle the cheese over the top and cover again for a minute or two, just until the cheese is melted.
  5. Scoop out with a spatula onto your eggs.
  6. Serve with tortillas if you have some.
  7. In fact, if you dont have any tortilla chips, you can use tortillas instead.
  8. Cut them into strips and fry them in oil until brown before adding the sauce.
  9. Top with sour cream if you have it.
  10. Or avocado.
