Ingredients

  • 2 cups cooked, diced chicken
  • 1 small can water chestnuts, sliced and drained
  • 1 small jar chopped pimento
  • 1/2 cup slivered almonds
  • 1 cup Weight Watchers mayonnaise
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook the chicken and chop it into small pieces.
  2. Mix the cooked chicken, sliced water chestnuts, chopped pimento, slivered almonds, mayonnaise, and shredded Cheddar cheese in a bowl.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Bake at 350°F (175°C) for 20 to 25 minutes until hot and bubbly.
  5. Optional: Top with 1 cup of crushed potato chips before serving.
