Ingredients

  • 5 cups vinegar
  • 5 cups sugar
  • 3 cups water
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice

Instructions

  1. Mix vinegar, sugar, water, and spices in a saucepan.
  2. Simmer the mixture for 10 minutes.
  3. Add chunked cucumbers and onion rings, if desired, to the hot syrup.
  4. Boil for an additional 5 minutes.
  5. Pack cucumber chunks into jars, cover with hot syrup, and seal immediately.
  6. Alternatively, store in jars in the refrigerator.
