Ingredients

  • 1 large egg, at room temperature
  • 5 tsp. fresh lemon juice
  • 1 tsp. Dijon style mustard
  • 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 1 c. olive oil, vegetable oil or a combination of both (I use safflower oil)

Instructions

  1. In a
  2. food processor or blender with the motor on high, blend the egg, lemon juice, mustard, salt and pepper.
  3. Add the oil in
  4. a slow
  5. stream
  6. and
  7. turn the motor off.
  8. Makes about 1 1/2 cups.
