Quick Potato Saute

Ingredients

  • 2 Tbsp. olive oil
  • 1 large onion, thinly sliced
  • 4 large potatoes, cooked in skins
  • 1 Tbsp. butter
  • 1/4 tsp. savory
  • salt and pepper

Instructions

  1. Heat oil in large skillet over medium heat.
  2. Add onion. Cover; cook for 4 minutes.
  3. Peel potatoes; cut in slices 1/2-inch thick.
  4. Add to pan with butter and savory; season well.
  5. Cook potatoes for 15 minutes over medium-high heat, stirring as needed. Sprinkle with parsley and serve.
