A quick, healthy zucchini spaghetti dish with garlic, olive oil, and Parmesan cheese, perfect for a light vegetarian meal or a weeknight dinner.

Ingredients

  • 2 medium zucchini
  • 4 cloves garlic
  • 1 lb. spaghetti noodles
  • 1/4 cup extra virgin olive oil
  • salt
  • pepper

Instructions

  1. Shred the zucchini using a box grater.
  2. Heat a large skillet over moderate heat and add the olive oil.
  3. Add chopped garlic to the skillet and cook until fragrant.
  4. Add the shredded zucchini to the skillet and season with salt and pepper.
  5. Saute the zucchini for 7 to 10 minutes until tender.
  6. Add the hot, drained spaghetti noodles to the skillet.
  7. Toss the spaghetti with the zucchini and garlic oil.
  8. Add grated Parmesan or Romano cheese and toss to combine.
