A quick and delicious fig preserves recipe featuring sweet, ripe figs cooked with sugar and ginger, perfect for spreading on biscuits or toast during cool weather.

Ingredients

  • 5 lb. fresh figs
  • 5 lb. sugar
  • ground ginger

Instructions

  1. Freeze fresh figs to reduce cooking time and make preserves when the weather is cool.
  2. Remove as much ice from the frozen figs as possible before cooking.
  3. Place the figs in a heavy-bottomed pan and cook very slowly until the figs begin to melt.
  4. Gradually increase the heat until the mixture is hot.
  5. Add the sugar and cook until the preserves are as thick as desired, stirring frequently to prevent scorching.
  6. Add ground ginger a half teaspoon at a time to taste.
  7. Bottle the hot preserves into sterilized half-pint jars.
