- Freeze fresh figs to reduce cooking time and make preserves when the weather is cool.
- Remove as much ice from the frozen figs as possible before cooking.
- Place the figs in a heavy-bottomed pan and cook very slowly until the figs begin to melt.

- Add the sugar and cook until the preserves are as thick as desired, stirring frequently to prevent scorching.
