Racoon Barbecue

Instructions
- Clean the "coon" and cut into quarters.
- Soak overnight in salt water.
- Drain; parboil in fresh water approximately 2 hours.
- Drain well; place in baking pan.
- Sprinkle with salt, pepper and onion. Mix mustard in barbecue sauce and pour over "coon."
- Bake in a 300° oven for approximately 3 hours, basting during cooking period.
