Racoon Barbecue

Ingredients

  • 1 large racoon, dressed
  • 1 c. salt
  • 2 Tbsp. black pepper
  • 1 tsp. red pepper
  • 1 (16 oz.) bottle Heinz barbecue sauce
  • 1/2 c. mustard
  • 2 medium onions, finely chopped

Instructions

  1. Clean the "coon" and cut into quarters.
  2. Soak overnight in salt water.
  3. Drain; parboil in fresh water approximately 2 hours.
  4. Drain well; place in baking pan.
  5. Sprinkle with salt, pepper and onion. Mix mustard in barbecue sauce and pour over "coon."
  6. Bake in a 300° oven for approximately 3 hours, basting during cooking period.
