Rainbow Waffles

Ingredients

  • 6 eggs, separated
  • 1 cup milk
  • 4 cups all-purpose flour
  • 8 teaspoons baking powder
  • 1 teaspoon salt
  • 10 tablespoons butter, melted
  • gel food coloring (red, orange, yellow, green, blue, purple)

Instructions

  1. Beat egg yolks together, then stir in milk.
  2. Combine dry ingredients and stir into the egg yolk mixture.
  3. Stir in melted butter.
  4. Beat egg whites until stiff and fold into batter.
  5. Split batter among six bowls (keep in mind you will use more of the red, orange and yellow), adding red food coloring to one bowl, orange to another and so on with the yellow, green, blue and purple food coloring. Use enough gel that the batter colors are very vibrant as they will darken while cooking!
  6. Place each colored batter into a Ziploc bag, close and cut off one of the tips (small, but not so small that it is hard to squeeze the batter out).
  7. Heat your waffle iron according to the manufacturer's instructions, then pipe the batter into the iron in circles, starting with the outside and working your way in: red, orange, yellow, green, blue, purple. Repeat until you have used all of the batter.
  8. For bonus points, rotate the exterior colors when piling up your waffles for a complete rainbow stack!
