Rakott Prumple (Layer Potatoes)

Instructions
- Cook potatoes in boiling water; pare and slice.
- Arrange 1/3 of slices in greased baking dish.
- Over this, slice 3 eggs and sprinkle with salt.
- Cover with half of sour cream.
- Make another layer and a final layer of potatoes.
- Top with the crumbs, mixed with melted butter and a bit of paprika.
- Add the heavy cream. Bake in a hot oven (400° to 450°) for 30 minutes or until crumbs brown.
- Makes 6 to 8 servings.
