Rakott Prumple (Layer Potatoes)

Ingredients

  • 6 to 8 medium potatoes
  • 4 hard-cooked eggs
  • 1 tsp. salt
  • 1 c. sour cream
  • 1/2 c. bread crumbs
  • 3 Tbsp. melted butter
  • 1/2 c. heavy cream

Instructions

  1. Cook potatoes in boiling water; pare and slice.
  2. Arrange 1/3 of slices in greased baking dish.
  3. Over this, slice 3 eggs and sprinkle with salt.
  4. Cover with half of sour cream.
  5. Make another layer and a final layer of potatoes.
  6. Top with the crumbs, mixed with melted butter and a bit of paprika.
  7. Add the heavy cream. Bake in a hot oven (400° to 450°) for 30 minutes or until crumbs brown.
  8. Makes 6 to 8 servings.
