Raspberry Glazed Chicken Drummettes

Ingredients

  • 1 tsp. salt
  • 1 tsp. ground pepper
  • 1/2 c. raspberry jelly
  • 1 Tbsp. Dijon mustard
  • 3 large cloves garlic, minced
  • 3/4 c. balsamic vinegar
  • 4 lb. drummettes
  • 2 scallions, thinly sliced

Instructions

  1. In medium bowl, combine salt, pepper, jam, mustard, garlic and vinegar; whisk until mixed.
  2. Place chicken in a large plastic food storage bag.
  3. Add jam mixture.
  4. Seal bag; turn to coat chicken with mixture.
  5. Marinate in refrigerator 2 hours or overnight. Spray baking dish with cooking spray.
  6. Cook chicken at 350° for 50 minutes.
  7. Transfer to platter; sprinkle with scallions.
