Ingredients

  • 2 (10 oz.) packages raspberries, thawed and drained, reserve juice
  • 1 quart vanilla ice cream
  • 2 1/2 cups raspberry juice and water
  • 1 (6 oz.) package raspberry gelatin

Instructions

  1. Bring the raspberry juice and water mixture to a boil.
  2. Add the raspberry gelatin to the boiling mixture and stir until dissolved.
  3. Add spoonfuls of vanilla ice cream to the hot gelatin and stir until melted.
  4. Chill the mixture until it is almost thickened.
  5. Fold in the drained raspberries.
  6. Chill until the dessert is firm.
