Ingredients

  • 1/3 cup applesauce
  • 1 (16 oz) can black cherries
  • 1 cup honey
  • 1/4 cup chopped pecans
  • 1/4 cup applesauce
  • 2 eggs
  • 1/4 cup milk
  • 2 cups whole wheat pastry flour
  • 1 tablespoon baking powder
  • cherry sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8 x 8-inch baking pan well.
  3. Drain juice from black cherries and reserve it.
  4. Place drained cherries and chopped pecans in the prepared pan.
  5. In a medium-sized mixing bowl, cream together the applesauce and honey.
  6. Add eggs and milk to the creamed mixture and beat until well combined.
  7. Pour the batter over the cherries and pecans in the pan.
  8. Bake in the preheated oven for approximately 35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool slightly before inverting onto a serving plate.
  10. Serve warm or at room temperature with cherry sauce.
