- Halve the breasts; bone and skin.
- Flatten with hand.
- Melt butter in heavy pan over low heat.
- Add chicken; cover tightly. Cook slowly until it is no longer pink inside (approximately 5 to 7 minutes), turning once.
- Do not brown.
- Remove chicken and reserve.
