Raspberry Lime Chicken

Ingredients

  • 2 whole chicken breasts
  • 2 Tbsp. margarine
  • 2 cloves garlic, crushed or minced
  • 2 Tbsp. brown sugar
  • 1 Tbsp. soy sauce
  • 1 1/2 Tbsp. raspberry vinegar

Instructions

  1. Halve the breasts; bone and skin.
  2. Flatten with hand.
  3. Melt butter in heavy pan over low heat.
  4. Add chicken; cover tightly. Cook slowly until it is no longer pink inside (approximately 5 to 7 minutes), turning once.
  5. Do not brown.
  6. Remove chicken and reserve.
