Ingredients

  • 1 quart fresh fruit
  • 3/4 cup sugar
  • 1/2 cup water
  • 2 tablespoons water
  • 1 1/2 tablespoons cornstarch

Instructions

  1. Put the fruit filling in a 9-inch baked pie shell.
  2. Crush 1 cup of fruit very fine.
  3. Heat 3/4 cup sugar with 1/2 cup water until sugar is dissolved.
  4. Add the crushed fruit to the syrup and mix.
  5. Make a smooth paste with 1 1/2 tablespoons cornstarch and 2 tablespoons water.
  6. Add the cornstarch paste to the strained fruit mixture.
  7. Cook until thick.
  8. Cool slightly and pour over the fruit filling.
  9. Serve with whipped cream or ice cream.
