Ingredients

  • 1 pkg. unprepared corn tortillas
  • sharp Cheddar cheese or Longhorn, shredded
  • chopped lettuce
  • diced tomatoes
  • "homemade salsa"
  • cooking oil
  • lemon juice

Instructions

  1. Cook roast in a crock-pot; top with 2 teaspoons lemon juice and one can of stewed tomatoes while cooking.
  2. When done, shred beef with fork.
