Red and Green Hot Salsa

Ingredients

  • 1 md. tomato, diced
  • 1 cucumber, peeled, seeded and diced
  • 1/2 cup green pepper, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup good olive oil
  • 1/4 cup fresh cilantro
  • 1-1/2 tbsp. red jalapeno, minced
  • 1-1/2 tbsp. green jalapeno, minced
  • Salt, to taste

Instructions

  1. Combine all ingredients in a medium bowl and season to taste with salt.
  2. Refrigerate for at least four hours to let the flavors "marry".
  3. Serve with your favorite chips.
