Ingredients

  • 1 medium to large onion, sliced
  • 1/2 red pepper, sliced
  • 1 c. stuffed green olives, sliced
  • 1/2 c. + 3 Tbsp. orange juice
  • 2 Tbsp. lemon juice
  • 1/4 tsp. coriander

Instructions

  1. Preheat oven to 400°.
  2. In large skillet over medium heat, saute the onions, red pepper and olives.
  3. Lay fish filets on top of sauteed onion, peppers and olives.
  4. Add 3 tablespoons orange juice, 2 tablespoons lemon juice, and 1/4 teaspoon coriander.
  5. Bake in 400° oven for 12 minutes.
  6. While fish is baking, mix a bit of cornstarch and water to thicken sauce.
