- Preheat oven to 400°.
- In large skillet over medium heat, saute the onions, red pepper and olives.
- Lay fish filets on top of sauteed onion, peppers and olives.
- Add 3 tablespoons orange juice, 2 tablespoons lemon juice, and 1/4 teaspoon coriander.
- Bake in 400° oven for 12 minutes.
- While fish is baking, mix a bit of cornstarch and water to thicken sauce.
