Ingredients

  • 5 lb. ripe red tomatoes
  • 4 lb. sugar
  • 2 lemons

Instructions

  1. Scald, peel, and quarter the tomatoes.
  2. Add sugar to the tomatoes and let stand overnight.
  3. Drain off the juice and boil it rapidly until it spins a thread when dropped from a spoon.
  4. Add the tomatoes and sliced lemons to the boiling syrup and cook until thick and clear.
  5. Add a few drops of red food coloring, then pour into hot jars and seal.
