Refreshing Turkey Salad
Ingredients
- 3 c. cooked rice, cooled to room temperature
- 2 c. diced cantaloupe ⓘ
- 1 1/2 c. cooked cubed turkey breast ⓘ
- 1/4 c. tightly packed fresh mint leaves ⓘ
- 1/4 c. tightly packed parsley sprigs ⓘ
- 1 garlic clove, halved
- 1 container (8 oz.) plain nonfat yogurt
- lettuce leaves ⓘ
- assorted fresh fruit (optional) ⓘ
Instructions
- In large bowl, combine rice, cantaloupe and turkey.
- In food processor fitted with metal blade, combine mint, parsley and garlic; process until finely chopped.
- Add yogurt; process to blend.
- Add yogurt mixture to rice mixture; toss lightly to combine.
- Cover and refrigerate 2 hours.
