Caramel Corn Candy

Ingredients

  • 8 qt. popped corn (air popped is best)
  • 1 c. butter or margarine
  • 1 c. sugar
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 2 c. salted or unsalted roasted peanuts
  • 1/2 c. firmly packed brown sugar
  • 1 tsp. baking soda
  • 1 tsp. maple flavoring

Instructions

  1. Combine popped corn and peanuts in a large mixing bowl; set aside.
  2. Combine butter, corn syrup, sugars and salt in a saucepan; bring to a boil.
  3. Reduce heat and simmer for 5 minutes, stirring occasionally.
  4. Remove from heat; quickly stir soda and flavorings. Pour over popcorn mixture; mix well.
