Roast Suckling Pig

A succulent roasted suckling pig with crispy skin, infused with sage and onion stuffing, perfect for special occasions and gatherings.

Ingredients

  • a suckling pig not more than 3 weeks old
  • sage and onion stuffing
  • butter or oil
  • thick cream (optional)

Instructions

  1. Stuff the pig with sage and onion stuffing, then sew up the opening with fine string.
  2. Brush the entire surface with melted butter or oil and wrap in several folds of well-greased grease-proof paper.
  3. Draw the legs well back and tie in a good shape.
  4. Roast in a moderate oven (350°F) according to size, allowing 25 minutes per pound and 25 minutes extra.
  5. Baste every 30 minutes during roasting.
