Ingredients

  • 1 whole chicken (3 to 4 lb.)
  • 2 Knorr chicken bouillon cubes
  • 2 lemons or 3 to 4 small lemons
  • 1/2 stick butter

Instructions

  1. Cut the bouillon cubes into quarters.
  2. Cut lemons into quarters if large, or poke holes with a fork if small. Dry the chicken thoroughly.
  3. Salt and pepper the inside of the chicken.
  4. Rub the outside of the chicken with butter, then salt and pepper.
  5. Stuff the chicken cavity with the lemons and bouillon cubes.

Tips & Substitutions

For a deeper flavor, consider adding fresh herbs like rosemary or thyme to the chicken cavity alongside the lemons and bouillon. If you don't have Knorr cubes, any chicken bouillon will work, or you can use homemade stock for more richness. To ensure crispy skin, let the chicken sit at room temperature for 30 minutes before roasting. You can also try using garlic powder for extra flavor.

Serving Suggestions

Serve the roasted chicken with a side of Amazing Rice for a hearty meal or pair it with a fresh salad like Chicken Breast Salad for a lighter option. Roasted vegetables or a creamy soup such as Zucchini Vichyssoise can complement the dish beautifully. For a complete dinner, a simple green salad with lemon vinaigrette works well to balance the richness.

Storage & Reheating

Store leftover roasted chicken in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 20 minutes or until heated through. For moist results, consider covering it with foil to prevent drying out. Shredded leftovers can also be used in salads or soups.

Frequently Asked Questions

Can I use a frozen chicken for this recipe?

Yes, you can use a frozen chicken, but be sure to thaw it completely in the refrigerator before cooking. This can take 24 hours or more, so plan ahead. Cooking a frozen chicken directly will lead to uneven cooking and may not achieve the desired crispy skin.

What can I do if I don't have lemons?

If you don't have lemons, other citrus fruits like limes or oranges can be excellent substitutes for adding acidity and flavor. Alternatively, you can use vinegar for a tangy taste. Just keep in mind that the flavor profile will vary slightly.

How do I know when the chicken is done?

To ensure the chicken is fully cooked, use a meat thermometer to check that the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. If you don't have a thermometer, the juices should run clear when the chicken is pierced.
