Ingredients

  • 1 large onion, chopped
  • 3 Tbsp. oil
  • 2 lb. zucchini, chopped large
  • 3 c. chicken broth
  • 2 Tbsp. fresh basil or 1 1/2 tsp. dry basil
  • 1/4 tsp. nutmeg
  • 1/4 tsp. pepper
  • 1 c. milk

Instructions

  1. Saute chopped onion in oil until translucent.
  2. Add chopped zucchini, chicken broth, basil, nutmeg, and pepper to the pan.
  3. Cover and simmer until vegetables are tender, about 15-20 minutes.
  4. Puree the soup until smooth.
  5. Return the pureed soup to the pan and add milk, stirring well.
  6. Serve the soup cold or hot, as desired.
