Roman Kebabs

Ingredients

  • 1 French bread (long stick)
  • 13 ounces mozzarella cheese
  • 4 tomatoes
  • 1/3 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • salt and black pepper
  • fresh basil (to garnish)

Instructions

  1. Preheat oven to 450°.
  2. Soak 4 wooden skewers in water for 10 minutes (can use metal).
  3. Cut bread into thick slices, and cut mozzarella into 12 slices.
  4. Slice tomatoes into 3 slices each.
  5. Combine oil, lemon juice, oregano and seasoning in a shallow dish.
  6. Brush both sides of bread with oil, thread bread onto skewers, alternating with mozzarella and tomato and finishing with bread.
  7. Pour any remaining oil over kebabs.
  8. Place kebabs on a baking sheet, cook for 6-8 minutes, turning halfway through, until bread is crisp and cheese has melted.
  9. Serve garnished with basil.
