Ingredients

  • 1/2 cup graham cracker crumbs
  • 1 3/4 cups sugar
  • 2 pounds cream cheese
  • 1 lemon and rind
  • 4 eggs

Instructions

  1. Butter the inside of an 8-inch deep pan with a 3-inch diameter.
  2. Do not use a spring-form pan.
  3. Sprinkle graham cracker crumbs around the bottom and sides of the prepared pan.
  4. Shake out excess crumbs.
  5. Beat cream cheese, eggs, sugar, lemon juice, lemon rind, and vanilla on low until blended.
  6. Increase mixer speed to high and continue until thoroughly blended.
  7. Pour the mixture into the prepared pan and shake to level the surface.
  8. Set the pan in a slightly larger pan with 1/2-inch of water, ensuring it does not touch the sides.
  9. Bake for 1 1/2 to 2 hours.
  10. Turn off the oven and let the cake stay inside for 20 minutes.
  11. Remove the cake from the water and place on a rack until it reaches room temperature.
  12. Invert the cake onto a plate.
  13. Garnish with fruit if desired.
