Round Cracked Wheat Bread

Ingredients

  • 1 1/2 c. cracked wheat
  • 1 1/2 c. water
  • 1 1/2 c. whole wheat flour
  • 1 envelope dry yeast
  • 2 Tbsp. sugar
  • 2 tsp. salt
  • 1/2 c. milk
  • 2 Tbsp. butter or margarine
  • 2 to 2 1/2 c. all-purpose flour
  • oil

Instructions

  1. Mix well the cracked wheat and water; cover and let stand overnight.
  2. In large bowl of mixer, mix whole wheat flour, yeast, sugar and salt.
  3. Set aside.
  4. Heat milk and butter until very warm (120° to 130°, butter does not need to melt).
  5. Gradually add to flour mixture, then add soaked cracked wheat.
  6. Beat at medium speed for 3 minutes, scraping bowl occasionally.
  7. Stir in enough all-purpose flour to make moderately stiff dough.
